Meal of the Moment

Hello friends!

I promised you the details on my favourite meal.  I just finished eating it, so it's splendor is fresh in my mind!

OK, you need a package of these.


Shirataki Noodles...I get them at Nature's Fare in Kelowna.  $3.50 a bag which is supposed to have seven servings, I'm here to tell you that is ridiculous...there are maximum two servings in these bags.  The beauty of these is that they are basically 'nothing noodles'.  No calories, no carbs, no fat, no soy no gluten...so what the heck are they you ask?  Who cares?  Ha ha.  Seriously though, here's some info from http://www.lowcarbdiets.com/

"Shirataki noodles were originally developed in Asia, but they have recently come to the attention of people around the world. Because these noodles are almost totally a beneficial type of fiber, they have almost no "bad" carbohydrates. There are some indications that they may have other health benefits as well....
Shirataki comes from the root of a plant (Amorphophallus Konjac, or a few other closely-related species) grown in various parts of Asia. The fiber is also known as glucomannan.
There is some evidence that glucomannan, when tested as a powdered supplement, can play a role in blood sugar control, as well as improve cholesterol control and weight loss (see this report). It also contributes to fiber intake and can be a substitute for starchy noodles."
 
So I will say again that the serving size is very small...I basically triple it, it means I'm maybe getting a calorie (literally) but I will get over that!
 
OK so when you open these babies they have a very pungent aroma!  They stink!  The good news is they don't taste like they smell!  Rinse them in a strainer under cold water.  I like to pull them apart a bit.  When you are ready to eat them just run hot water over them...no need to cook!
 
Now the other part of this meal.
 
 


Gardein is basically the only company I will eat 'mock meats' from.  They use real things like spelt, kamut and quinoa along with vegetable fiber.  This Mandarin Chicken is reminiscent of a General Li kind of chicken...but here's the good news...the sweet orange sauce is not loaded with sugar.



There are 15 calories in a serving of the sauce and only two grams of sugar!  The Chick'n is 150 calories.
Cook this up according to package directions.  I also stir fry some veggies (just grab a bag of broccoli slaw if you're in a hurry)

Pile the Veggies and 'Chick'n" on top of your hot noodles.  If you like more sauce, add a dash of your favourite variety (I like teriyaki sesame) and a dash (or 10) of hot sauce.  DELICIOUS! 

If you eat meat...just substitute chicken or shrimp and a bottled stir fry sauce.

If you love Asian-type soups...put all of this in a bowl and pour hot broth on top!  Mmmm...I'm hungry all over again.

These noodles are very versatile...I haven't tried them in place of pasta in Italian dishes yet, they feel more asian to me...like a rice noodle.  They do come in a Fettucini Noodle which would probably be better for heavier sauces.  Try them!  Let me know what you think.

Oatmeal is Magic!

Hello again! First of all I must be clear that I am talking about good, old fashioned, slow cooking oats...rolled or steel cut.  Not the instant variety with options like maple, brown sugar or peaches and cream :( I cut oatmeal out of my morning routine a few months ago when I went (mostly) vegan.  The reason is that I add protein powder to my oatmeal and I gave up Whey Protein (milk protein).  I purchased some Soy and other Vegan protein options, but the dreadful taste turned me off of my 'go-to' breakfast.  I enjoy working out in the morning, cardio, weights etc. and so protein is a necessary part of my diet.  Since eggs are off the menu, I made the decision to add some 'whey' protein back into my life.  So now morning oatmeal is back on with the addition of GNC's delicious Vanilla Protein Powder.  It means I can't call myself a Vegan...but after four weeks back on the oatmeal, I lost three pounds.  It's the only thing that's c...

Indian Food Intimidation

Hello friends. I have something I need to get off my chest.  For years, I have been intimidated by curry.  I don't know a Vindaloo from a Tikka Masala.  What I do know is that I always enjoy an authentic Indian meal, I just want to be able to cook one myself! Last night a friend put on a fantastic Indian spread...butter chicken (none for me!)  a delicious vegetable curry and a chick pea curry.  There was of course naan bread and basmati rice.  Delicious.  Today I was inspired...I entered the grocery store without a list or any concrete plan.  I just knew I wanted a curry dish, I knew what I wanted in it and how it should look and taste.  Brave I know...but this story has a happy ending.
