A Turkey Dinner Fit for a Vegetarian!

Hello Friends!

Happy Easter.  I just arrived home from my first Turkey Feast as a Vegetarian.  It all went very well...I'm stuffed!
My friend Becky prepared a beautiful meal...all the fixings.  I am the only Vegetarian in the group so a few contributions from me were necessary! I've discovered being Vegetarian is a lot of work, even when you're an invitee!  Obviously I would not be eating the turkey, but gravy, stuffing and mashed potatoes were also off the menu for me. (I follow a Vegan diet, except for whey protein powder.)
So, after a whirlwind morning at the soccer pitch, (my niece's team won, in case you were wondering) I came home and whipped up some nice roasted veggies.  I combined yam, turnip, baby potatoes, onion and parsnips.  Olive oil and fresh rosemary give them beautiful flavour.  Next, a vegan mushroom gravy.  Onions, garlic, celery and mushrooms sauteed in white wine and a little veggie broth.  Here it is just before I pureed it with the hand blender.



It really is delicious.

To replace the turkey, I brought along a Gardein Chick'n Scallopini!  This brand is great when it comes to 'mock meats'.  Minimal soy protein and ingredients like quinoa, spelt and veggies.




Finally, my annual contribution to the meal...Killer Coleslaw...a Best of Bridge classic.  It really kicks turkey dinner up a notch.

Vegetarian etiquette requires that you bring enough of 'your food' for everyone...hence all the work...but I love to cook and I love to share, so it all works out.

We love our friends and so look forward to time spent in their company.  Tomorrow we do it all again with a different group.  I will add some roasted beets to the menu.  My mom's recipe is the best.  Scrub the beets, slice them with skin on, then toss with EVOO and a dash of cinnamon.  Lay them out on a cookie sheet and bake at 350 degrees for half an hour or until tender.  Yum, yum...no leftovers with this one!  I will post pictures tomorrow...so pretty.

Obviously with all this eating, there must be workouts!  My legs are still very sore, so I did a quick cardio warm up and then the Gabby Reece upper body workout this morning...tomorrow I will balance it out with legs and abs.  Remember to check out her website if you want so spice up your at home workouts!  http://www.thehoneyline.com/

Oatmeal is Magic!

Hello again! First of all I must be clear that I am talking about good, old fashioned, slow cooking oats...rolled or steel cut.  Not the instant variety with options like maple, brown sugar or peaches and cream :( I cut oatmeal out of my morning routine a few months ago when I went (mostly) vegan.  The reason is that I add protein powder to my oatmeal and I gave up Whey Protein (milk protein).  I purchased some Soy and other Vegan protein options, but the dreadful taste turned me off of my 'go-to' breakfast.  I enjoy working out in the morning, cardio, weights etc. and so protein is a necessary part of my diet.  Since eggs are off the menu, I made the decision to add some 'whey' protein back into my life.  So now morning oatmeal is back on with the addition of GNC's delicious Vanilla Protein Powder.  It means I can't call myself a Vegan...but after four weeks back on the oatmeal, I lost three pounds.  It's the only thing that's c...

Indian Food Intimidation

Hello friends. I have something I need to get off my chest.  For years, I have been intimidated by curry.  I don't know a Vindaloo from a Tikka Masala.  What I do know is that I always enjoy an authentic Indian meal, I just want to be able to cook one myself! Last night a friend put on a fantastic Indian spread...butter chicken (none for me!)  a delicious vegetable curry and a chick pea curry.  There was of course naan bread and basmati rice.  Delicious.  Today I was inspired...I entered the grocery store without a list or any concrete plan.  I just knew I wanted a curry dish, I knew what I wanted in it and how it should look and taste.  Brave I know...but this story has a happy ending. I grabbed all my vegetables first.  Onion, garlic, red pepper, cauliflower, potato and peas.  I moved on to organic chick peas, light coconut milk and brown basmati rice.  A great base...but then the curry conundrum.  I appr...
