Happy Easter. I just arrived home from my first Turkey Feast as a Vegetarian. It all went very well...I'm stuffed!
My friend Becky prepared a beautiful meal...all the fixings. I am the only Vegetarian in the group so a few contributions from me were necessary! I've discovered being Vegetarian is a lot of work, even when you're an invitee! Obviously I would not be eating the turkey, but gravy, stuffing and mashed potatoes were also off the menu for me. (I follow a Vegan diet, except for whey protein powder.)
So, after a whirlwind morning at the soccer pitch, (my niece's team won, in case you were wondering) I came home and whipped up some nice roasted veggies. I combined yam, turnip, baby potatoes, onion and parsnips. Olive oil and fresh rosemary give them beautiful flavour. Next, a vegan mushroom gravy. Onions, garlic, celery and mushrooms sauteed in white wine and a little veggie broth. Here it is just before I pureed it with the hand blender.
It really is delicious.
To replace the turkey, I brought along a Gardein Chick'n Scallopini! This brand is great when it comes to 'mock meats'. Minimal soy protein and ingredients like quinoa, spelt and veggies.
Finally, my annual contribution to the meal...Killer Coleslaw...a Best of Bridge classic. It really kicks turkey dinner up a notch.
Vegetarian etiquette requires that you bring enough of 'your food' for everyone...hence all the work...but I love to cook and I love to share, so it all works out.
We love our friends and so look forward to time spent in their company. Tomorrow we do it all again with a different group. I will add some roasted beets to the menu. My mom's recipe is the best. Scrub the beets, slice them with skin on, then toss with EVOO and a dash of cinnamon. Lay them out on a cookie sheet and bake at 350 degrees for half an hour or until tender. Yum, yum...no leftovers with this one! I will post pictures tomorrow...so pretty.
Obviously with all this eating, there must be workouts! My legs are still very sore, so I did a quick cardio warm up and then the Gabby Reece upper body workout this morning...tomorrow I will balance it out with legs and abs.
